Healthy Buffalo Cauliflower Dip Recipe

Ingredients

  • 2 tbsp olive oil
  • 1 head of cauliflower
  • 1 small onion diced
  • 1/2 tsp Garlic Powder or 2 cloves of fresh garlic
  • 1/2 cup Sour Cream
  • 8 oz Cream Cheese or Nuefacchel cheese
  • 1/3-1/2 cup Frank's Red Hot depending on spice preference
  • 1/2 cup Gorgonzola Cheese or your favorite blue cheese optional
  • 1/2 cup Cheddar Cheese shredded
  • Salt to taste
  • Black pepper to taste
  • A few sprigs of Chives green onions, or fresh parsley for garnish

Instructions

  • Mince onions and garlic
  • Cut your cauliflower into small bite sized pieces, called cauliflower florets.
  • Heat some olive oil in a cast iron skillet over medium heat
  • add your cauliflower that's been cut into smaller pieces into your skillet with a tbsp of water
  • Cover and allow to cook for 10-15 minutes or until fork tender
  • Cut up your room temperature cream cheese or Nuefacchel cheese into cubes
  • Then mix in your sour cream and hot sauce
  • Add salt and pepper to taste
  • Optionally, you can add extra seasonings like onion powder, chili powder, or parsley to add extra flavor
  • Mix in your blue cheese and prepare to transfer it into an oven safe baking dish, or you can leave it in your cast iron skillet
  • This is optional, but you can cover the top with cheddar cheese and place the hot dip under the broiler for a minute for the cheese to get melted
  • Serve while still hot, and enjoy!
