Vegetarian French Onion Soup

Swap out beef broth for a savory and umami mushroom stock with this classic comfort food

Equipment

Ingredients

  • 2 large yellow onions sliced long and thin
  • 4 cloves garlic minced
  • 16 oz container of baby bella mushrooms sliced
  • 4 cups of vegetable broth
  • Splash of red wine
  • 1 tbsp of soy sauce
  • 1 tbsp olive oil
  • salt to taste
  • pepper to taste
  • 1 tsp cumin
  • 1 block melting cheese such as gruyere or mozzarella
  • 1 baguette

Instructions

  • Heat oil in a dutch oven
  • Caramelize your onions by cooking them on reduced heat for about 15 minutes
  • Once the onions are golden brown, then add your mushrooms and a generous pinch of salt and let them cook until tender
  • Once the liquid from the mushrooms has mostly evaporated, add your garlic
  • When the garlic starts to turn fragrant and golden brown, add your wine to deglaze the pan
  • Add your cumin, black pepper, and soy sauce which will give a savory aroma
  • Add your vegetable stock and let cook for about 30 mins
  • While the soup is cooking, prepare the cheesy bread by cutting a baguette into bite size pieces
  • Then place cheese on top to your desired amount and toast in the oven at 400F until the cheese is golden and bubbly
  • Once the soup is finished cooking, pour into a bowl and top with the toasted cheesy bread
  • Serve and Enjoy!
