Heat oil in a dutch oven
Caramelize your onions by cooking them on reduced heat for about 15 minutes
Once the onions are golden brown, then add your mushrooms and a generous pinch of salt and let them cook until tender
Once the liquid from the mushrooms has mostly evaporated, add your garlic
When the garlic starts to turn fragrant and golden brown, add your wine to deglaze the pan
Add your cumin, black pepper, and soy sauce which will give a savory aroma
Add your vegetable stock and let cook for about 30 mins
While the soup is cooking, prepare the cheesy bread by cutting a baguette into bite size pieces
Then place cheese on top to your desired amount and toast in the oven at 400F until the cheese is golden and bubbly
Once the soup is finished cooking, pour into a bowl and top with the toasted cheesy bread
