It’s that time of year when the cold weather starts to come in, and the daylight hours decrease – Soup season! But while temperatures are dropping, food prices are not! Vegetarian soups are easy meals you can make on a small budget. From creamy potato leek soup to African-inspired Stews, these healthy soup recipes will inspire your next meal!

There are a few components that you'll need for every healthy soup recipe. Every delicious soup needs vegetable broth and fresh herbs to add flavor. A good soup needs lots of vegetables and sometimes an immersion blender. But for the most part, you'll need minimal equipment. My favorite pot to make soup in is my Dutch oven, but you can use any large pot that works for you.

You'll need to start with some olive oil in a large pot or a dutch oven. Add your leeks and onions and let them get fragrant. After that, you can add your chopped potatoes and cover it with vegetable broth. Once it's simmered for thirty minutes or so, you can hit it with an immersion blender.

The main ingredients in this healthy soup recipe are sweet potatoes and spinach, but you can really add any vegetables you have like green beans, fresh tomatoes, or even white beans. You can spice it up with red pepper flakes or chili powder to create a flavorful soup. 

This sweet potato and chickpea stew was inspired by West African soups and stews, which leverage vegetable-heavy dishes and tons of flavor from spices. One of the great things about stews in general is the ability to generate a large number of portions with little additional effort. This recipe yields up to ten portions alone, and if served over rice or with bread, it can stretch up to twelve servings.

We’re taking a pantry and budget-friendly vegetarian spin on a classic recipe to make vegetarian or vegan chili with TVP.

The great benefit about this dish is that is has 21 grams of protein per serving! It ensures the dish will fill you up, but it isn’t calorie dense at 340 calories per serving. There is also 16 grams of fiber from this meal, so it will be sure to keep you balanced. If you choose, you can top it with healthy fats like avocado. Highly recommend adding your preferred regular or non-dairy sour cream and shredded cheese.

The key ingredients in this vegetarian chili recipe is TVP or texturized vegetable protein is a type of protein isolate that has been processed into a shape that looks like ground meat. Contrary to popular belief, TVP has actually existed for quite some time. Back in the day, it was used to extend the yield of things like ground meat in fast food establishments. The benefit of using TVP is that it is shelf-stable and animal product-free. While TVP can come from many sources, the two most popular types are derived from soy and pea protein. 

Some other key ingredients include fire roasted diced green chilis, black jalapeños, crushed tomatoes, and corn. But you can change this recipe up however you want to make chili your favorite way. 

Vegetarian French Onion Soup

If you didn’t know, most french onion soup is made with beef broth, which gives it an rich, umami flavor. In place of beef stock, we’ve added minced mushrooms, savory vegetable stock, red wine, and some soy sauce to create this rich flavor. This recipe is made with simple ingredients like onions, oil, mushrooms, and vegetable stock and comes together in about 30 minutes. 

Simply start by caramelizing the onions, and then adding your mushrooms. Once those are cooked, add garlic, wine, and soy sauce. Top with the vegetable stock and let that cook for about 30 minutes. From there, you can broil crusty bread with cheese and place it on top of the soup. This saves you from having to broil an individual bowl or crock.

Healthy Cannellini Bean and Leek Soup Recipe [Vegetarian]
