How Do I Make Ricotta Toast?

The main components of Ricotta toast are simply hearty bread and ricotta cheese. It would be best if you started by toasting the bread. For this, coat the slices of bread with a drizzle of olive oil and place on a rimmed baking sheet. If you prefer not to use your oven, place each toast in a cast iron pan over medium heat and heat until golden. 

You can prepare the ricotta however you’d like, or simply eat it plain. You can even whip it in a food processor or a hand mixer for an aerated texture. This creamy whipped ricotta toast really takes it to the next level. While it’s totally optional, you can add whatever toppings you’d like.


There are infinite flavor combinations, but I recommend sprucing up your ricotta if you have the time. All you’ll need is a small bowl to combine ricotta with your desired ingredients. It’s even better if you allow the flavors to marinate overnight. A little orange or lemon zest and a pinch of salt goes a long way to enhance the flavor of the ricotta in the recipe.

A few notes about Ricotta:

Your local grocery store will typically call this out for you, or you can just take a look at the back to see where it was manufactured. If you’re feeling adventurous, you can use homemade ricotta, but this can be a messy process (trust me from past experiences). All of these recipes work if you use vegan ricotta as well. You can try Kite Hill Ricotta, or make your own out of tofu.


Differences between Ricotta Types:

When you walk in the grocery store, you might notice that there are different types of ricotta, ranging from Fresh, Part Skim, Whole Milk and Salted. For ricotta toast, we recommend using part skim so the moisture is lower. But for your own knowledge, here’s the difference between them:

Fresh ricotta is the most perishable type of ricotta cheese, and it has the highest moisture content. It is made by gently heating whole milk with an acid, such as lemon juice or vinegar. This causes the milk proteins to coagulate and form curds. The curds are then strained and drained to produce a fresh, creamy ricotta cheese. Fresh ricotta has a mild, sweet flavor and a slightly grainy texture.

Part-skim ricotta is made in the same way as fresh ricotta, but it is made with part-skim milk instead of whole milk. This results in a ricotta cheese that is lower in fat and calories than fresh ricotta, but it also has a slightly drier texture and a less creamy flavor.

Whole milk ricotta is made with whole milk, which gives it a richer flavor and a creamier texture than part-skim ricotta. However, it is also higher in fat and calories.

Salted ricotta is simply ricotta cheese that has been salted. The salt helps to preserve the ricotta cheese and also enhances its flavor. Salted ricotta is often used in savory dishes, such as lasagna and cannelloni.

  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • Pinch of Salt

An easy recipe for ricotta toast is to mix the ricotta with minced garlic and a little olive oil. Then place a fresh summer tomato on top. You can finish this with flaky sea salt and some cracked black pepper. This is a delicious summer recipe!


Pumpkin Ricotta + Figs + Sage + Balsamic Toast

This last recipe was the star of the show for ricotta toast brunch! I made a pumpkin ricotta by mixing a little bit of pumpkin puree with ricotta cheese, a little salt, and some lemon juice. Then I added dried sage and fresh figs. To finish it off, I drizzled a little balsamic glaze on top. This combination was so flavorful and delicious!
