Vegetarian French Onion Soup

While we don’t have a recipe for this one just yet, we have a video! We’re working on the post for this one now, but this vegetarian French Onion is one for the books! If you didn’t know, most French onion soup is made with beef broth, which gives it an rich, umami flavor. In place of beef stock, we’ve added minced mushrooms, savory vegetable stock, red wine, and some soy sauce to create this rich flavor. This recipe is made with simple ingredients like onions, oil, mushrooms, and vegetable stock and comes together in about 30 minutes.

Simply start by caramelizing the onions, and then adding your mushrooms. Once those are cooked, add garlic, wine, and soy sauce. Top with the vegetable stock and let that cook for about 30 minutes. From there, you can broil crusty bread with cheese and place it on top of the soup. This saves you from having to broil an individual bowl or crock.
