Vegetarian Sandwich Recipe Ideas & Tips with Chips!

Sandwiches are a great, comforting, and convenient meal for many. So many sandwiches are focused on meat and cheese as the star of the show, but texture and flavor are the best ways to create a good sandwich. Many struggle to find some good pairings when making veggie sandwiches or end up with very soggy sandwiches from too many vegetables. When you're making a vegetarian sandwich, there are a few components that you should keep in mind. That's why today I'm sharing the most satisfying vegetarian sandwich ideas that will keep you full and craving another one. 

You can alter these recipes any way you'd like, but you should understand the components that make a good sandwich to get inspired for more vegetarian sandwich ideas! To add another dimension of texture to your sandwich while fighting food waste, be sure to add a layer of Uglies Potato Chips to your sandwich! What Makes a Good Vegetarian Sandwich

Bread

Whether you're using a roll or slices of bread, make sure the bread you've selected will hold all of your toppings! For a more elevated touch, you can toast your favorite bread in a pan with olive oil. My personal favorite is a multigrain bread or whole grain bread. 

Vegetables

Vegetables are a critical component of a vegetarian sandwich. Whether you're using juice tomatoes, a creamy avocado, red peppers, or a caramelized onion topping, there are so many good options for vegetables that provide different flavors. 

Sauce

From a balsamic glaze to mustard to mayonnaise to hummus, a great veggie sandwich usually has a sauce that adds another flavor dimension to the sandwich. The great news now is that there are many vegetarian and vegan sauces available!

Cheese

The type of cheese matters on your sandwich and should complement your vegetables but not overpower them. For a vegan version, you can always use a piece of vegan cheese or just omit it altogether.

Texture

Texture can come from many places in a sandwich, such as crusty bread, uncooked vegetables, lettuce leaves, or even potato chips to your sandwich. A vegetarian sandwich with a good texture is one that's sure to satisfy. 

Vegetarian Sandwich Recipe Ideas

1. BALT – BBQ Chips, Avocado, Lettuce, and Tomato

BALT - BBQ Potato Chips Sandwich Vegetarian BLT Sandwich Ideas

This is my take on the classic BLT – or Bacon, Lettuce, and Tomato sandwich. The BALT includes BBQ Chips, Avocado, Lettuce, and Tomato slices. It's a great way to elevate a simple sandwich to maximize texture and flavor. 

Instead of bacon, I'm substituting the fattyness you'd get from bacon with a healthy fat from a creamy avocado. For the smokey flavor, I added Uglies BBQ Potato Chips. Of course, I finished the sandwich with lettuce, tomato, and mayo on a toasted multigrain loaf. This made a fantastic lunch!

2. Goat Cheese & Roasted Mushroom Sandwich

For a more earthy flavor, You can try this goat cheese and roasted mushroom sandwich. The goat cheese is spread on the bread and then topped with crispy roasted mushrooms and balsamic glaze. My preferred mushrooms here are baby portobello mushrooms, but you can use large ones if you prefer. For some greens, I added spinach, but arugula would also be good. For sweetness, I topped it with sweet potato chips for a sweet crunch. 

3. Cheese Sandwich with Pickles

A good cheese sandwich reminds me of a Cold Cut sandwich but without the meat. I like a cheese sandwich with iceberg lettuce, tomato, red onion, mayo, and pickles. You can add whatever you'd like to this version, but I like a sharp cheddar or provolone as my cheese or choice. Of course, you can also put sea salt chips on here for an added element of texture. 

4. Roasted red pepper sandwich + Feta Cheese + Hummus + Fresh basil

If you prefer healthy sandwiches, these next ones are for you. I like to take a healthy schmear of hummus and then place some crumbled feta in it for a bit of tangy flavor. If you top it with a roasted red pepper and some chiffonned basil, you have a quick and easy sandwich ready in just a few minutes. I recommend adding BBQ chips here for extra flavor! 

5. Tomato Sandwich

In the summertime, nothing makes lunchtime on a hot day like a tomato sandwich. To make this sandwich, you'll need a few slices of tomato, a pinch of salt and pepper, and some mayonnaise. This is one of my family's favorite sandwiches when tomatoes are in season. You can easily make this sandwich vegan by using vegan mayonnaise. It's simple and pairs so nicely with sunshine and Uglies potato chips.

6. Chickpea salad sandwich

A chickpea salad can make a healthy sandwich. To make a chickpea salad, mash chickpeas with a fork and mix it with mayo, lemon or lime juice, and fresh herbs like spring onions. You can also add sesame seeds, chopped celery, and onion to give it a bit of texture. Place the mixture in a pita pocket with lettuce, tomato, or any other of your favorite veggies, and you have a great lunchtime meal. Pair these with sweet potato chips for a delicious earthy flavor!

7. Classic Caprese

Walk into any deli in New Jersey, and they are guaranteed to have a Caprese as a menu item, which is the only vegetarian option. It doesn't take away from the fact it is a delicious sandwich, but it's quite easy to make. All you'll need is some fresh mozzarella, basil pesto, and juicy tomatoes. It pairs perfectly with a balsamic glaze and Sea Salt Uglies chips for one of my favorite vegetarian sandwich ideas.
